Neurosurgeon Dr. Markus Chwajol to open 2nd Chicago restaurant

Spine

Markus Chwajol, MD, a neurosurgeon with Chicago-based UI Health, is opening a restaurant in the city Feb. 28, reports Eater Chicago.

Dr. Chwajol previously owned Bohemian House, a European-inspired restaurant in downtown Chicago, which closed in 2018. Since then, he has been looking to get back into hospitality — his second passion after neurosurgery.

Cobblestone, the new restaurant, assumes the space of a former cider bistro. It will serve Czech, German, Hungarian, and Austrian cuisine and add some local and European specialty beers to the cider offerings.

He graduated from State University of New York and completed his residency at Montefiore Medical Center and Roosevelt Hospital, all based in New York City.

After medical school, he completed a fellowship at the University of Illinois at Chicago and has practiced with UI Health since.

Dr. Chwajol specializes in a variety of conditions, including spinal tumors, brain tumors, stenosis and degenerative disc disease.
